Happy Monday! ✨ To make sure everyone is starting off their week right… we’re sharing our Loaded Baked Sweet Potatoes with extra cheese sauce (as if there is any other way)! 🍠🧀😍 You can definitely personalize this recipe with whatever toppings you love, but we had to include some peas, jalapeño peppers and some seasoned baked tofu 💚 And let’s just say this vegan cheese sauce is too amazing to not store in the fridge! You can use it for nachos, salads or whenever you’re feeling’ a little extra cheesy! Who says being vegan has to be boring? Definitely not us! 😋 Check out all the recipes below! ⤵️⤵️👌🏼👌🏼

4 sweet potatoes ⁣
1 cup of peas ⁣
2 jalapeño peppers, finely chopped (optional) ⁣

Baked Sweet Potatoes:⁣

1. Pre-heat oven to 425.⁣
2. Line your baking sheet and prick your sweet potatoes with a fork. ⁣
3. Cook for about 50 minutes or until nice and soft. ⁣
4. Let your potatoes cool. ⁣
5. Cut your potatoes open once they are cool. ⁣
6. Top of your sweet potatoes with peas and jalapeño peppers. ⁣
7. Add some baked tofu (recipe found below) ⁣
8. Top it off with our amazing vegan cheese sauce (recipe found below) ⁣
9. Enjoy 🙂 ⁣

Baked Seasoned Tofu ⁣
16 oz of extra firm tofu, diced ⁣
2 tbs of liquid aminos⁣⁣
2 tbs of olive oil ⁣
1/2 tsp of garlic powder ⁣

Baked Seasoned Tofu: ⁣

1. Pre-heat oven at 350 degrees F.⁣⁣⁣
2. In a mixing bowl, scramble your block of tofu⁣⁣
3. Add the rest of the ingredients and mix well. ⁣⁣
4. Place the tofu on a baking sheet.⁣⁣⁣
5. Place in the oven for 20-30 minutes or until golden brown.⁣⁣⁣
6. Remove from the oven and let it cool.⁣⁣

Cheese Sauce: ⁣
1 can of white beans⁣
1/2 tsp of onion powder⁣
1/2 tsp of garlic powder⁣
3 tbs of olive oil⁣
1 tbs or Dijon⁣
1 tbs of white miso⁣
1 tbs of apple cider vinegar⁣
3 tbs of nutritional yeast⁣
3/4 cup of oat milk (full fat)⁣

Cheese Sauce ⁣
1. In a pot, add all of your ingredients. Cook on medium heat for about 5 minutes. ⁣
2. Once ingredients have cooked, add them to your blender. ⁣
3. Blend all ingredients until smooth ⁣
4. Pour on your baked sweet potatoes ⁣
5. Tip: if sauce is too thick, add some water or more oat milk.

  1. @livinlaveganlife I have never experimented with oak milk, do you think coconut, soy or almond would be an okay substitute??
