Happy Tuesday! Masala? ๐Ÿ˜๐Ÿ˜ฑ Count us in! There are very few things more comforting than chickpeas and masala, if you ask us. With all the Fall rain this week๐Ÿงก๐ŸŒง, we needed a recipe that was warm and comforting, but always tasty (as usual). Our Eggplant Chickpea Masala ๐Ÿคค can be served on a bed of warm rice or quinoa – maybe even on itโ€™s own, but letโ€™s be honestโ€ฆ. everything is better with rice ๐Ÿš Right? Eggplant Chickpea Masala โฃ
2 tbs of coconut oil โฃ
1 onion, diced โฃ
2 inches of ginger, dicedโฃ
2 eggplants, diced โฃ
3 garlic cloves, mincedโฃ
1/2 cup of water โฃ
2 cans of chickpeas, drained โฃ
28 oz of diced tomatoesโฃ
2 tbs of tomato paste โฃ
1 tsp of fenugreek โฃ
1 1/2 tbs of garam masala โฃ
1/2 tsp of smoked paprika โฃ
Salt/pepper to tasteโฃ
1/2 cup of cilantro, choppedโฃ
1. In a pan, add coconut oil and cook onion and ginger until caramelized. โฃ
2. Add eggplant and garlic and cook for 10 minutes. Stir occasionally. โฃ
3. Add water, chickpeas, diced tomatoes, tomato paste, fenugreek, garam masala, paprika and salt/pepper. Mix well. Simmer for 15-20 minutes.โฃ
4. Add cilantro on top before serving.โฃ
5. Enjoy ๐Ÿ™‚
