It’s always a good day to whip up a stir fry! 😍👨🏻‍🍳 We love to add red curry paste to our stir fry for lots of flavor and the perfect amount of spice (if you ask us🔥) Instead of using regular extra firm tofu, we also added soy tofu puffs, which we found at our local Asia market! It adds the perfect texture to switch it up! Check out the recipe below ⤵️⤵️⤵️⁣

2 tbs of coconut oil ⁣
2 inches of ginger, finely chopped ⁣
1 large onion, julienne ⁣
4 oz of red curry paste ⁣
2 tbs of sugar ⁣
12 oz of soy puffs tofu (or regular extra firm tofu) ⁣
1 can of coconut milk ⁣
2 cups of mushrooms, chopped ⁣
1 bell pepper, julienne ⁣
3 cups of greens (bok choy was used for this recipe) ⁣

1. In a pan, heat up oil. Add onion and ginger. Cook until onions are caramelized. ⁣
2. Add curry paste, sugar and cook for 5 mins on medium low temp. ⁣
3. Add tofu puffs, coconut milk, and mushrooms. Simmer everything for 10 mins. ⁣
4. Add in bell pepper and greens and cook for 5 mins or until greens are cook to preference. ⁣
5. Enjoy 🙂
