Wondering how to improve your gut health? ✨ Kim chi. * 4 lbs napa cabbage
* 1/2 cup salt
* 4 large carrots peeled, thinly sliced
* 2 green onions, sliced
* 1/4 cup korean chili powder
* 5 large garlic cloves, peeled
* 6 inches ginger peeled, roughly chopped
* 2 tbs of liquid aminos * 5 tbs white miso paste⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Roughly chop the napa cabbage into squares (make sure to save 3-4 leaves for step Place the cabbage in a large container, sprinkle salt, and massage well to coat in salt. Fill the container with cold water enough to cover it and let it soak overnight.
2. Pour the brine from the cabbage into a strainer. Save the brine.
3. Place green onions, garlic cloves, ginger, Korean chili powder, and white miso in a food processor. Pulse a couple of times. Add liquid aminos and 1/4 cup of brine. Pulse until you get a paste-like consistency. Add to container.
4. Thinly slice carrots, and add it to container with cabbage. Massage well until coated with the paste.
5. Pack tightly into glass mason jars. Roll the leaves that you saved from the day before, and put them tightly on top of the coated cabbage, to assure that everything is submerged in the brine. Keep any remaining brine refrigerated.
6. Place the jars on a dish to catch any spill-over. Let it sit at room temperature for up to 72 hours, or until it is bubbly or ready to your liking.
7. Once every day, open the jar to let some pressure escape. If needed, pour in some additional brine to keep all the vegetables submerged.
8. When ready, store the kimchi in the refrigerator.
