You had me at Guac and Patacones 🤤😍 Lets just say guac and plantains are two of our favorites… sooo irresistible! Plus, guacamole just makes everything better – right?🥑 With warmer weather on the horizon, finger foods, snack and refreshing foods are what we gravitate towards. 💚💚💚 Check out the recipe below! ⤵️⤵️⤵️⁣

2 plantains⁣
1 cup of cooking oil ⁣
Salt to taste ⁣

2 avocados, mashed ⁣
1/2 red onion, finely diced⁣
1 large tomato, finely diced ⁣
Juice of 1 lime ⁣
Salt⁣
Optional: 1/2 cup Roasted pine nuts ⁣

1. Cut your plantains into 1-inch pieces. ⁣
2. In a medium sized pan, warm your cooking oil on medium-low heat.⁣
3. Fry the plantains for 10 minutes. Assure each side of the plantains are browned equally.⁣
4. Mash your pieces of plantain (we used two cutting boards)⁣
5. Refry the mashed plantains for about 4-5 minutes on each side. ⁣
6. Season with salt 🧂 ⁣
7. In a bowl, add your mashed avocado, red onion, tomato, lime juice and salt. Mix well. ⁣
8. Garnish with roasted pine nuts! ⁣
9. Enjoy 🙂
